Idiyappam
INGREDIENTS
Rice flour / Idiyappam flour: 1 Cup
Thick Coconut milk : 1 Cup
Jaggery or Palm sugar : 1 Cup
Cardamom powder : 1/2 teaspoon
Gingelly oil : 1/2 teble spoon
Salt : according to your taste

Method of Preparation:
- First, take a cup of rice flour / Idiyappam flour in a big bowl. Then, add salt and mix well. Now, add hot water and cautiously mix with a ladle to make soft and smooth dough without any lumps in the mix.
- Now, you have to add a few drops of Gingelly oil to the dough. Cover and keep aside.
- Then, fill the Idiyappam press or the mould with the dough. The mould hole should be small. Then, smirch the Idiyappam plates with little bit of oil..
- Now squish out the dough from mould carefully onto the plates. Avoid Squeeze more Idiyappam on one plate.
- Then steam for 15 to 20 minutes on medium flame. Now open the Idli cooker and transfer to a serving plate.
- Now add Sugar or Jaggery, Cardamom powder into Coconut milk. Mix well. Sugar should be dissolve.
- Now serve Idiyappam with Coconut milk. Enjoy!
